Composition of the soil:

the composition of the soil in the three vineyards is a well balanced sandy clay alternated with strata of stone.

The texture is loose but with adequate water retention and this allows for excellent early maturation of the sugar content of the grapes, while the balanced chemical composition of

micro elements has a positive effect on the synthesis of the main organic acids and phenolic ripening.

Vine training system:

Unilateral Guyot with a maximum of six flower buds per plant.

In the winery

Grape Harvest:

during the first 10 days of October the best grapes on the vine are selected, hand picked and collected in cases: in the winery we carry out pre-destemming manual sorting.

Fermentation:

the winemaking process is achieved through separation into clones and/or vines with a homogeneous ripening rate. Pre-fermentative cold maceration in stainless steel thermo-

regulated tanks, remontage, mechanical punching down and deferred extraction for around 25 days.

Vinification:

after the process of malolactic fermentation the wine remains on the lees and is stirred manually for 6/8 weeks. And for a further 18 months in 500 litre French oak tonneaux.

Ageing:

in steel: 3 months

in bottle: 6 months.

beautiful dark ruby red with purple hue.

Nose:

rich fruit, forest fruits, especially blackcurrent and blueberry

Flavor:

fascinating on the palate, soave and elegant, velvety soft tannin and lingering, clean finish.
